Café & Kitchen Rules

Once the guiding principles of menus and products are determined, executing in the kitchen is an altogether different set of guiding principles. This is where we begin to create items that are considered "Über Fresh" Über Fresh is our term to describe the quality, taste, and appearance of our food. There are several guiding principles that help us achieve "Über Fresh". They are;

  • Entrée vegetables are fresh or frozen/fresh depending on varietal and seasonality
  • Mashed potatoes are always made from fresh potatoes
  • Cookies, muffins, and several sandwich breads are baked fresh daily
  • Fresh turkey and beef are roasted in-house daily and used for deli meat
  • Flavored mayos, Salsas, and Sauces are fresh made
  • Fats are removed from sauces, soups, and stocks whenever possible
  • We use fresh seasonings and salts when available and in season. Dried seasonings are never older than 3-months
  • Day old breads are made into homemade, seasoned croutons or homemade breadcrumbs
  • Fresh Bread and cheese are always at the salad bar
  • Fryer oil is pickup up by a certified recycler.
  • You can ask your Chef where any product comes from and how it's made and he/she will know the answer or get it quick.
  • Menus are based on seasonality and availability of product that meet our Principles of Sustainability.
  • We only use Turkey breast and chicken produced without the routine use of antibiotics as a feed additive
  • Our 1st option for all meats is Antibiotic , HGH, and Hormone Free
  • Milk products are free of antibiotics and artificial Bovine Growth Hormone
  • Eggs are from local farms when available and are produced cage-free and Certified Humane
  • Our healthy menu program "One Body" offers mainstream options throughout our cafés
  • Tuna is dolphin-safe, packed in water
  • Trans fats are not used in our kitchens
  • ½ portions are always available at the deli
